This is an old trusted recipe for tasty spiced Christmas cookies with a hint of orange. They are super easy to bake and perfect to package and give as festive gifts, hang on your Christmas tree or share with your nearest and dearest. Or all three. For me, a couple will accompany a glass of warm mulled wine while watching Elf with the family.
- 125g butter
- 70g caster sugar
- 65 golden syrup
- 315g plain flour
- 1tsp ground ginger
- 1tsp cinnamon
- 2tsp bicarbonate of soda
- 1 large egg
- 230g icing sugar
- 1tsp orange juice
Place butter, sugar and syrup in a saucepan and bring to the boil. Heat until the sugar has dissolved and then leave to cool
Sift flour, spices and bicarbonate of soda and add to the syrup mixture. Add the egg and beat well. Then, knead with your hands to form a stiff dough
Roll out about 6mm thick and then use cookie cutters to cut out your Christmas shapes. Pierce a hole in the tops with a toothpick, which is where the twine will be threaded
Place cookies on a greased baking tray and put in the oven at 180 degrees Celsius for approx. 10 minutes until golden brown
Place on a wire rack and allow to cool before icing
For the icing
Sift icing sugar and add enough orange juice to make a stiff icing. Then place in a piping bag and ice the cookies. Outline the cookies with the icing, and add a couple of mini silver edible baubles for extra cheer
After icing, allow to set in the fridge, and then thread twine and hang! Or stack them into a gift box with wax paper and give as a festive gift!
